The 'Aux Boudots' vineyard is my personal favourite of the Nuits St.-Georges premiers crus, not least due to the style and character of the wines, given the vineyard's location on the Vosne-Romanee border abutting 'Aux Malconsorts'.  Benoit Chevallier has 0.27 hectares of vines averaging more than 50 years of age, and the wine spends around 18 months aging in oak barriques, half of which are new.
