From Jo Perry’s thoughtful, low-intervention project in Margaret River, the 2025 Dormilona Cabernet Sauvignon is sourced from the Yungarra vineyard in Yallingup, where established vines grow in gravelly soils over limestone. Working with organically grown fruit and a light touch in the cellar, Perry crafts a distinctive expression of Cabernet that favours freshness, texture and savoury detail over overt oak influence. Wild fermentation and gentle extraction allow the fruit and vineyard character to take centre stage, resulting in a wine that feels both distinctly regional and refreshingly individual.

The nose offers blackcurrant, blackberry and dark cherry, complemented by bay leaf, dried herbs and a subtle earthy, graphite-like nuance. The palate is vibrant and finely structured, with juicy dark fruit balanced by fresh acidity and gently chewy tannins. There is a pleasing savoury quality throughout, with hints of red earth and spice adding complexity without weighing down the fruit. Rather than relying on richness or heavy oak, the wine draws its appeal from its energy, textural character and quietly persistent finish.
