Established in 1818, Billecart-Salmon has earned a reputation for Champagne of remarkable finesse and aromatic precision, and its NV 'Le Rosé' is one of the house’s signature cuvées. Blending Chardonnay, Pinot Noir and Meunier, with a portion of Pinot Noir vinified as red wine to achieve its delicate salmon-pink hue, it balances the structure of Pinot with the freshness of Chardonnay and the supple fruit of Meunier. Matured on lees for approximately three years, the wine develops added texture and subtle brioche complexity while retaining its characteristic freshness.
The nose is fragrant and finely detailed, with wild strawberry, raspberry and redcurrant lifted by blood orange zest, rose petal and hints of fresh pastry. The palate is beautifully poised, combining juicy red berries with citrus brightness and a gently creamy mousse. Fine acidity keeps the fruit lively, while a subtle savoury, almost saline quality brings definition to the finish. Elegant rather than overtly powerful, it offers impressive harmony between fruit, freshness and texture, with enough depth to work beautifully at the table. A refined and versatile rosé Champagne, equally suited to an aperitif, salmon sashimi or a simply prepared seafood dish.
